MMM BEST EVER TOAD IN THE HOLE

When I can write that I made the best ever Toad in the Hole right here in Alberta Canada, you know it's a winner! The altitude here is high so recipes need tweaking to make them work, this one has taken me over 10 years to perfect but today I finally got it and the family agreed (Next time I'll be doing a double recipe in a 9x13 casserole for the 4 of us!) This is a dish I grew up enjoying back in the UK so every time I have it it brings back fond memories of childhood! TOAD IN THE HOLE

12 pork breakfast sausages

3/4 cup egg white

200ml 2% milk

150g plain flour

1/4 tsp salt


1. Pre-heat the oven to 425F.

2. Put the sausages in a 9x9 casserole dish.

3. Bake for 5 minutes.

4. Whisk the egg whites with the milk, whisk in the flour and salt. 5. If there is enough fat from the sausages to thinly cover the bottom of the dish pour the batter over the sausages. If there is not enough fat from the sausges add some oil and return the dish to the oven for 5 minutes before pouring on the batter- It is the hot oil that makes the batter cook and rise.

6. Return the dish to the oven and cook for 30-40 minutes until the batter has risen, set and is golden. ENJOY!
